I. Want. Wine.
Days 5 and 6 have been the best I’ve felt so far during the day. I’m writing this on day 6, and last night’s sleep was also the best I’ve had in quite some time. I awoke at one point in the same position in which I fell asleep, and that rarely happens to me. I slept hard for sure. 🙂
I love roasted root veggies, so I went for that on Day 5 dinner. I made the zucchini-cashew soup, but sadly I bought organic roasted cashews instead of raw. The soup was okay, but I’m sure it would have been way better if I had made it correctly.
Day 6 has been good, although I missed lunch again. Did have a snack of green apple and almond butter a few minutes ago, so I’m feeling satisfied.
Dinner… I’ve gone off of the reservation with reset meals a couple of times now, and tonight is the farthest I’ve gone. I’m supposed to be eating zucchini squash soup and roasted root medley, which I had last night (a night early according to the plan).
I was really tempted to indulge tonight, so… I am making spaghetti squash with fresh tomato sauce (organic tomatoes, onions, and garlic with EVOO, spices, and a little balsamic vinegar). I think I’m going to throw a few crushed cashews on top to sub for my normal parm. 😉
Excited for a yummy gluten-free vegan dinner and leftovers from the week on day 7!
